We source our apples exclusively from trusted, certified-organic farmers across Himachal Pradesh, from orchards around 5,000-7,000 ft in the Rohru belt to our high-altitude orchard at approximately 9,000 ft in Kinnaur.

Our apples are sourced from verified, certified-organic orchards in Himachal Pradesh rather than anonymous wholesale-market supply.
We work with farmers whose cultivation philosophy we understand and whose orchards we know.
Our sourcing follows the Himalayas, from the comparatively lower apple-growing elevations around Rohru to the cold, high-altitude landscape of Kinnaur.
Scientific research has documented the importance of altitude to Himachal's apple economy, with commercial cultivation extending from approximately 1,500-2,500 meters in belts such as Rohru to 2,500-3,500 meters and beyond in higher regions including Kinnaur.
An apple shouldn't be defined merely by its color.
A tart Granny Smith is a completely different eating experience from a sweet Red Gold. Gala has its own aromatic sweetness, while Royal Delicious represents the familiar character of the traditional Himalayan red apple.
That's why we identify and sell our apples by cultivar wherever possible.
From cultivation through storage, our philosophy is simple: apples should reach you without unnecessary chemical intervention.
Fresh-season apples are sourced from our organic farmers, while our late-season Kinnaur harvest is cold stored without chemical treatment or fumigation for supply through the off-season.
One of the most important things to understand about apples is that they don't all ripen together.
Our apple season begins in July, with varieties from the earlier-growing belts. As the season progresses, harvesting moves through different cultivars and elevations, eventually reaching our high-altitude Kinnaur orchard.

Our assortment changes naturally as one cultivar finishes and another reaches maturity.
That isn't inconsistency. That's seasonality.
Our Rohru apples come from a renowned farming family whose orchard has been under natural and organic cultivation since 2012, with practices aligned with Subhash Palekar Natural Farming.
Their relationship with the land spans generations.
Perhaps the most telling example of that commitment is the farmer's 90-year-old mother, who continues to work on the farm.
This is not agriculture practiced merely as commerce. It is a family deeply connected with its orchard, its soil and its way of farming.
Rohru sits within one of Himachal Pradesh's important apple-growing landscapes; research has documented the region's strong association with temperate horticulture and apple cultivation.
As the Himalayan apple season climbs higher, we eventually reach our second extraordinary farmer in Kinnaur.
His orchard lies at approximately 9,000 ft, in the dramatically different environment of the high Himalayas.
The farmer himself is unusual.
He holds a PhD in Education and chose to remain in his region and teach at a local school rather than leave for seemingly greener professional opportunities in Shimla.
Alongside teaching, he tends his certified-organic, biodynamic apple orchard.
The Kinnaur orchard follows a biodynamic approach in which important orchard activities, including aspects of fertility and pest-cycle management, are planned with reference to traditional Indian calendrical cycles.
More than 90% of the agricultural inputs are prepared by the farmer himself at the orchard.
His attention to input quality goes remarkably deep, even the neem oil used in the orchard is cold-pressed.
For us, that level of involvement matters.
Instead of simply replacing one purchased agricultural input with another, the farmer is working toward an orchard that increasingly generates and manages its own inputs.
The Kinnaur orchard exists in a strikingly dry high-altitude environment.
The village receives very little rainfall, so its agriculture depends on water flowing down from the Himalayas.
Two mountain streams pass through the village and provide its irrigation water.
This creates an agricultural landscape fundamentally different from the relatively wetter apple-growing belts farther south, another reason apples from different parts of Himachal should not be thought of as interchangeable commodities.
High-altitude Kinnaur is part of the Himalayan region where changing temperatures and chilling conditions have increasingly made higher elevations important for apple cultivation. Scientific research has documented commercial apple orcharding extending into the 2,500-3,500 meter belt in areas including Sangla and Pooh.
Our Kinnaur orchard also comes from a village with an extraordinary local tradition.
The village is associated with Padmasambhava Ji, Guru Rinpoche, revered across Himalayan Buddhist traditions as the "Second Buddha", who, according to local tradition, personally visited and blessed the village.
For us, this isn't presented as a claim about the nutritional qualities of the apples.
It is part of the cultural landscape from which they come, a remote Himalayan community where agriculture, nature, tradition and spirituality have coexisted for generations.
Our high-altitude Kinnaur apples are expected to arrive towards the end of October.
A significant portion is then retained by us in controlled cold storage so that customers can continue enjoying our trusted farmer's apples after the fresh harvest season ends.

Apple trees require adequate winter chilling, and temperature, snowfall, rainfall and elevation all influence their phenology and growing conditions.
Research in Himachal Pradesh has documented a significant upward movement of viable apple cultivation over recent decades, with orchards shifting from approximately 1,200-1,500 m historically toward 1,500-2,500 m and, in parts of the higher Himalayas, 2,500-3,500 m and beyond.
This is why "Himachal Apple" alone doesn't tell the entire story.

We begin receiving fresh apples in July from comparatively lower elevations. As summer progresses into autumn, different varieties and higher-altitude orchards reach harvest maturity. Eventually, towards the end of October, our apples arrive from approximately 9,000 ft in Kinnaur.
Research shows that this relationship between altitude and apple cultivation is becoming even more important as changing Himalayan temperatures alter suitable apple-growing zones.
