Most commercially available jaggery powder relies heavily on meetha soda (sodium bicarbonate) - often up to 500g per batch - to force rapid crystallization. While efficient, this shortcut flattens flavor and alters jaggery’s natural character.

In our process, only 5-10g of meetha soda is used - just enough to initiate crystallization. What follows is hours of continuous manual stirring of semi-solid jaggery, allowing a natural crystal-to-crystal chain reaction to take over. As one crystal forms, it encourages the next, slowly transforming the entire batch into fine, dry jaggery crystals - without chemical dependence.
The sugarcane itself is a carefully nurtured mix of multiple indigenous varieties sourced from across India, cultivated organically on our farm. Each variety contributes its own nuance, resulting in a layered, complex sweetness that customers immediately recognize and prefer.
