Jaggery Powder prepared from Sugarcane grown at our own farm. Usually, relatively high quantity (100g-150g) of baking soda is used to turn jaggery to jaggery powder with ease, in less time and to reduce labor costs. But as it is Sodium Bicarbonate, we all know the ill effects of high sodium consumption. Jaggery Powder prepared from our own farm's sugarcane uses less than 10g of baking soda and 3 muscular men :) in 80 kg of Jaggery Powder preparation. Interesting fact: Crystallized sugars are considered to have a cooling effect on the body while non-crystallized sugars have warming effect. Thus, Mishri, Khaand, Boora are known to be cooling sugars and Jaggery and Jaggery Powder are known to be warming sugars.
