Sometimes you want pasta because you want pasta - warm, savory, comforting and easy. The question is what you make it from.
Our Organic Kutki (Little Millet) Pasta is crafted with 70% Kutki flour and 30% Khapli (Emmer) wheat flour, with no maida. Kutki's mild, gently nutty character makes it particularly easy to enjoy, while Khapli gives the pasta enough structure to hold its rustic spiral form.
Add the accompanying organic masala and you have a comforting bowl that scratches much the same itch as masala noodles or instant pasta, only the primary grain here is an ancient Indian millet.
Every grain and spice used is certified organic.
Kutki (Panicum sumatrense), commonly known as Little Millet, is one of India's traditional small millets. Depending on where you are in the country, you may also hear names such as Samai, Samalu or Saame.
Don't let the word little undersell it. The name refers to the grain's tiny size, not its nutritional relevance.
Kutki naturally provides dietary fiber, protein and minerals, while its relatively mild flavor makes it especially versatile. It doesn't dominate a dish, which is precisely why it works so well here: you can make a millet the principal grain in a pasta without making the finished bowl feel unfamiliar.
Our formulation uses 70% Kutki, with 30% Khapli wheat supplying the gluten and binding needed to create pasta that holds together during cooking.

The strongest nutritional argument for this pasta is also the simplest: 70% of its flour comes from Little Millet rather than refined maida.
Kutki naturally provides dietary fiber alongside protein and minerals such as iron, magnesium and phosphorus. As a less-refined cereal base, it also retains more of the grain's naturally occurring components than refined wheat flour.
That doesn't turn pasta into a medicinal food, nor does it need to.
What it does offer is a practical way to replace a predominantly refined-flour comfort food with one built primarily around millet, while keeping the taste and format familiar enough for regular family meals.
For households interested in longevity and metabolic health, that broader principle matters: dietary diversity, more whole grains and fewer routinely consumed refined grains are more meaningful than chasing a single “superfood.”

If you're accustomed to preparing instant noodles or instant pasta, don't automatically use the same amount of water.
Kutki and Khapli retain considerably more of their grain structure than refined maida. This formulation therefore needs generous hydration to soften properly and develop the intended texture.
Using too little water can leave the pasta firmer and drier than intended.
The ~700 mL quantity is based on the cooking behavior of this formulation and is our recommended starting point.
1. Bring ~700 mL water to a boil
Use a sufficiently wide pan so the pasta has room to move and hydrate evenly.
2. Add the pasta
Add the complete 170 g pack to the boiling water.
3. Allow the twists to soften
Cook gently, stirring occasionally to prevent sticking and encourage even cooking.
4. Add the tastemaker
Once the pasta begins to soften, add the accompanying organic spice mix and stir thoroughly.
5. Cook until tender
Continue cooking until the spirals reach your preferred softness and the masala coats them well.
6. Rest briefly and serve warm.
Millet-heavy pasta doesn't cook exactly like conventional durum-wheat pasta or instant noodles.
Taste one of the thicker twists before switching off the heat. If the center is still too firm, add a little hot water and continue cooking. The objective is properly hydrated pasta, not simply finishing within a predetermined number of minutes.
The supplied tastemaker means the easiest version is simply a bowl of warm masala Kutki pasta.
For a more complete meal, add peas, carrots, beans, capsicum, mushrooms, spinach or sweet corn. A little butter or ghee can soften the spice profile for younger children.
Kutki's mildness also makes this one of the more versatile pastas in our millet range. Skip the tastemaker and pair it with fresh tomato sauce, pesto, sautéed vegetables or a simple garlic-and-olive-oil dressing.
And those irregular twists aren't merely decorative - their curves and ridges are rather good at hanging onto sauce.
Little Millet itself is naturally gluten-free, but this pasta is NOT gluten-free because it contains 30% Khapli wheat.
It is therefore not suitable for people with coeliac disease or anyone medically required to avoid gluten.
Millet should also not automatically be interpreted as “low-carb” or “low-GI.” Kutki remains a carbohydrate-containing cereal, and the glycemic response of the finished dish depends on processing, cooking, portion size and what you eat alongside it.
The “Little” in Little Millet refers to its exceptionally small grain and not to its importance.
