Our Organic Kodo (Kodra) Millet Pasta is made with 70% Kodo Millet flour and 30% Khapli (Emmer) wheat flour - no maida. The short, rustic fusilli-style twists have an earthy whole-grain character and hold the accompanying organic masala beautifully.
It is our way of taking an ancient Indian millet and putting it into a form the entire family already loves: comforting masala pasta, made from genuinely better grains.
Every grain and spice used is certified organic.
Kodo Millet (Paspalum scrobiculatum), also called Kodra, Kodon, Arikelu and Varagu in different parts of India, is one of the country's traditional small millets.
It has a pleasantly earthy, grain-forward character and naturally contributes dietary fiber and minerals. Unlike refined maida, you're not stripping the meal back to predominantly refined starch before turning it into pasta.
For this pasta, Kodo Millet accounts for 70% of the flour blend. We combine it with 30% Khapli (Emmer) wheat, whose gluten provides the binding and elasticity necessary to create pasta that can hold its twisted shape through cooking.
So while the form is decidedly modern, the grains underneath it are anything but.

The biggest nutritional distinction isn't a trendy ingredient added in a tiny quantity. 70% of the flour in this pasta is Kodo Millet.
Kodo is a whole-grain millet that naturally provides dietary fiber, along with minerals and naturally occurring polyphenolic compounds. Its fiber-containing grain matrix also makes it a more interesting everyday choice for people trying to move away from predominantly refined-flour foods.
Khapli wheat provides the structural qualities needed for pasta while keeping the recipe firmly rooted in traditional grains.
The result is particularly useful for families who want to increase grain diversity and millet consumption without asking everyone at the table to completely change how they eat.

This is important because cooking these like conventional instant noodles can leave them unnecessarily firm.
The combination of Kodo Millet and Khapli wheat contains substantially more of the grain's fiber-containing structure than a refined-maida noodle or pasta, so adequate hydration matters.
If you're accustomed to preparing instant noodles with a small quantity of water, don't use the same quantity here. Insufficient water can leave the pasta firm and unevenly hydrated.
The ~700 mL quantity is based on the cooking requirement of this formulation and is our recommended starting point for achieving the intended softness.
1. Bring ~700 mL water to a boil
Use a sufficiently wide pan so the pasta can move and hydrate evenly.
2. Add the pasta
Add the complete 170 g pack to the boiling water.
3. Allow the spirals to soften
Cook gently, stirring occasionally to prevent sticking and encourage even hydration.
4. Add the tastemaker
Once the pasta has begun to soften, add the accompanying organic masala and stir thoroughly.
5. Cook until tender
Continue cooking until the spirals reach the softness you enjoy and the masala coats them well.
6. Rest briefly and serve warm.
Millet-heavy pasta doesn't necessarily behave like conventional durum-wheat pasta or instant noodles. Taste a spiral before switching off the heat.
If the center still feels too firm, add a little hot water and continue cooking. A few additional minutes are preferable to serving under-hydrated pasta.
The accompanying tastemaker makes this an easy masala pasta straight out of the pack, but don't stop there.
Add peas, carrots, capsicum, beans, mushrooms or sweet corn for a fuller meal. A little ghee or butter works beautifully if you're making it for children and want a gentler bowl.
You can also leave the tastemaker aside and treat it like regular pasta. Kodo's earthy flavor works particularly well with a fresh tomato sauce, sautéed vegetables, pesto or a simple garlic-and-olive-oil preparation.
And the twisted shape isn't merely aesthetic - all those curves and grooves give masala and sauce somewhere to cling.
Kodo Millet itself is naturally gluten-free, but this product is NOT gluten-free because it contains 30% Khapli wheat.
It is therefore not suitable for people with coeliac disease or anyone medically required to follow a gluten-free diet.
Millet also shouldn't be confused with “carbohydrate-free” or automatically “low-GI.” Kodo remains a carbohydrate-containing cereal, and the glycemic response of the finished pasta depends on formulation, processing, cooking and the rest of the meal. Anyone actively managing blood glucose should consider portion size and the complete meal rather than relying on the word millet alone.
Kodo Millet is sometimes described as a “forgotten millet,” but there is nothing new about it. It has a long history of cultivation on the Indian subcontinent and remains part of traditional food cultures in several regions.
