Love a warm bowl of masala pasta but would rather skip the maida? Our Organic Kangani (Foxtail Millet) Pasta is made with 70% Kangani flour and 30% Khapli (Emmer) wheat flour, turning one of India's ancient millets into an easy, satisfying everyday comfort food.
Its rustic, short fusilli-style twists have a substantial bite and hold the accompanying organic masala beautifully. The result is familiar enough to satisfy that Maggi-like masala craving, but made from grains we would much rather eat regularly.
Every grain and spice used is certified organic.
Kangani (Setaria italica), better known internationally as Foxtail Millet, is among the world's oldest cultivated millets. In India, you'll also encounter it as Kangni/Kakum, Thinai in Tamil and Navane in Kannada.
Its naturally mild, slightly nutty and earthy character makes it particularly well suited to pasta. It brings considerably more grain personality than refined maida without overwhelming the accompanying spices or sauces.
For our pasta, Kangani makes up 70% of the flour blend, while 30% Khapli wheat supplies the gluten necessary to help the twists retain their structure during cooking.

The seasoning is deliberately uncomplicated, familiar spices giving you a warm, savory masala pasta without needing an elaborate flavoring system.

The nutritional proposition here is not that pasta suddenly becomes a “health food.” It is that the grain underneath the pasta is fundamentally different.
With 70% Foxtail Millet instead of refined maida, Kangani is the dominant grain in every serving. Foxtail Millet naturally contributes dietary fibre, protein and minerals such as iron, alongside naturally occurring plant compounds.
Its fibre-containing grain matrix can also contribute to better satiety than a predominantly refined-flour product.
Khapli wheat completes the formulation by giving the pasta enough structure to hold together while retaining the emphasis on traditional grains.
For families trying to eat more diverse whole grains and millets without abandoning foods they actually enjoy, this is where the product makes sense.

This is one cooking instruction worth paying attention to.
Kangani and Khapli behave differently from the refined flour used in conventional instant noodles. The fibre-containing grain formulation requires generous hydration to become properly tender.
If you're accustomed to making instant noodles with very little water, don't use the same quantity here. Too little water can leave the millet pasta firmer and drier than intended.
The ~700 mL quantity is based on the cooking requirement of this formulation and is our recommended starting point for achieving the intended texture.
1. Bring ~700 mL water to a boil
Use a sufficiently wide pan so the pasta has room to cook evenly.
2. Add the pasta
Add the complete 170 g pack to the boiling water.
3. Allow it to soften
Cook gently, stirring occasionally so the twists cook evenly and don't stick together.
4. Add the tastemaker
Once the pasta begins to soften, add the accompanying organic spice mix and stir thoroughly.
5. Cook until tender
Continue cooking until the pasta reaches the softness you prefer and the masala coats the twists well.
6. Rest briefly & serve warm
Millet pasta is better judged by texture. If a spiral still feels too firm at the centre, add a little hot water and continue cooking. Don't serve it under-hydrated simply because a conventional pasta or noodle would already have been ready.
The accompanying tastemaker means you can enjoy it simply as masala pasta, but Kangani's mild flavour also makes this an unusually versatile millet pasta.
Add peas, carrots, capsicum, beans, mushrooms or sweet corn for a fuller bowl. A little butter or ghee works beautifully for children who prefer gentler flavours.
You can also leave the tastemaker aside altogether and use the pasta with a fresh tomato sauce, pesto, sautéed vegetables or your own homemade pasta sauce.
The twists are particularly useful here: all those ridges and curves give the sauce somewhere to cling.
Although Foxtail Millet itself is naturally gluten-free, this pasta is NOT gluten-free because it contains 30% Khapli wheat.
It is therefore unsuitable for people with coeliac disease or those who medically need to avoid gluten.
For anyone monitoring blood glucose, “millet” should also not be interpreted as “free food.” Kangani remains a carbohydrate-containing cereal; portion size and the composition of the overall meal still matter.
Foxtail Millet gets its English name not from the grain itself, but from the plant's distinctive bushy seed head, which resembles a fox's tail.
It is also no new-age “supergrain”: Foxtail Millet is among humanity's oldest domesticated cereal crops, with archaeological evidence of its cultivation stretching back thousands of years.
