Our Homemade Unsalted Butter comes from the same ethical dairy farm nestled in the Aravalli hills from which we source our Sahiwal Cow Bilona Ghee. The farm follows a remarkably traditional approach: cows spend around 8 hours grazing freely in the open, while the green feed provided to them is grown organically on the farm itself.
And there is an interesting twist to the making of this butter. 🧈
We follow the traditional Bilona method used for our ghee and simply stop the process at the butter stage. This gives you fresh, cultured butter with the distinctive richness and aroma of traditionally churned dairy, without salt or unnecessary additions.
The quality of butter starts long before churning.
Our milk comes from Sahiwal cows raised on a farm nestled in the Aravallis, where:

🌱 Farm-Grown Green Feed: The green fodder is grown organically on the dairy farm itself.
🐮 Every Calf Matters: Male and female calves receive equal care, with no discrimination based on gender.

This is more than simply sourcing milk from a dairy farm. It is a farming philosophy built around animal care, natural feeding and responsible dairy practices.
Unlike conventional butter production, where cream is typically separated from milk and churned, the Bilona tradition begins with cultured milk.
The milk is first cultured to make dahi, which is then traditionally churned to separate the butter from the buttermilk.
The butter obtained at this stage is then normally heated further to produce ghee.
