Green Pumpkins have a rustic charm and are delightfully tender for cooking any vegetable dish. While only green varieties of pumpkin exist, more often than not, underripe Orange Pumpkins are sold as Green Pumpkins. Tenderness of Green Pumpkin makes it suitable for soups or sautéed foods. Also, as these are underripe, the sugar content is lower and more suited for diabetics. Nutritional content of both Green Pumpkins as well as Orange Pumpkins is almost the same in terms of Vitamins C-E-B, fiber and beta-carotene. Green Pumpkins have a shorter shelf life than their Orange counterparts.
