High altitude honey from Spiti Valley in Himachal Pradesh. It is extracted from boxes kept at aLitude of 14,000 feet in the Himalayas from Apis Mellifera, an Italian species of small bees. Though production from these bees is higher, the care required to keep and manage these bees is very high. High aLitude honey crystallizes very soon and so does Spiti valley honey.
