Thick, red carrots that are easy to grate and thus, are suitable for preparing halwa or other sweet recipes. Red carrots are sweeter and juicier and hence, much tastier. While beta-carotene and lycopene are common nutrients in red and orange carrots, it is anthocyanins which bring the deep red tone to red carrots and that explains why red carrots grow well in winters as anthocyanins are a winter pigment. Red carrots are more suited to juicing and sweet dishes. Beware, overeating carrots can take away all these benefits and cause further problems.
