Here is another of very nutritious greens, Kale, rich in antioxidants, vitamin C, vitamin K, and beta-carotene. Kale belongs to the Brassicaceae family, same as that of cabbage and cauliflower. The dark green color of Kale means more chlorophyll and it can help prevent absorption of heterocyclic amines - substance produced in high-temperature-grilled animal food. Hard Fact: Not advisable to people with bloating issues. Kale & other cruciferous veggies contain raffinose, a type of sugar. When raffinose reaches the large intestine, it is fermented by bacteria, which produces gas as a by-product.
