Millets (Shree Anna)
Millets are a varied group of small-seeded grasses,unlike larger seeds grasses like rice and wheat. Largest millet by global production is Jowar (sorghum) and second largest is Bajra (pearl millet). Like grasses, millets are primarily source of Carbs with carbs comprising ~70% of their weight, very much like Rice and Wheat. What is different is though, the nature of carbs in millets. Unlike rice and wheat carbs, millets carbs release their calories slowly and have much lower glycemic index compared to Rice and Wheat, making millets totally suitable for diabetics in particular and anyone seeking to eat healthy in general.
